Children will be adventurous eaters if that's something that's encouraged at home. If a parent indulges only eating chicken nuggets and mac+ cheese, the child won't be very encouraged to eat healthier. Perhaps institute a "try one bite" rule in your house. Over time, you'll find that your child is more adventurous.
Making healthy food fun is a great idea. Letting children help prepare food can encourage them to eat healthier and colourful food such as vegetables seem more appealing when a child can arrange them in a funny face on a whole wheat pizza bagel. Another tip is that sauces that your child does like (such as cheese, for instance) can dress up an otherwise boring-looking meal.
You can also puree plenty of healthy foods to add to other dishes such as meat loaves, sauces, and soups. If you don't keep too much unhealthy foods in the house, the children can't ask for them :)
Also, prepare big batches of home-cooked food for the freezer and you'll save yourself time, money, and energy while also giving your family healthy choices.

Cut up fresh fruit and veggies in a bag in the fridge (make sure their very colorful and tasty) chicken cubed and refridgerated, cheese and crackers, yummy all natural fruit and veggie juices (bolthouse farms is a great one!) Some of those frozen meals with veggies added can be good - try a lasagne or macaroni or pizza maybe. Hot dogs (sausie in a bun), home made burgers (frozen patties) hard boiled eggs, cheese, yogurt, lotsa stuff really.. :) Remember you can always make bulk or freeze left overs for when you're short on time.. Hope that helps you out!!
